Here on the farm we have sweet potato plants all over lining the pathways. Most people are familiar with their deliciously sweet tubers but many are surprised to find out you can also eat the greens of this plant. Not only are they tender & pleasantly mild in flavor, but they also have some great health benefits as well, such as helping to prevent prostate cancer. The greens can be used in salads, soups, smoothies, etc. Anywhere you can use spinach you can also use sweet potato greens.
Here on the farm, one of our favorite ways to use this versitel green is to sautee them. Here is a quick, easy, & tasty recipe to get you started with these wonderful greens.

Sauteed Sweet Potato Greens
3 cups packed sweet potato greens
2 cloves of garlic, minced
1/3 cup diced onions
1 tbsp olive oil
salt to taste
Heat oil in pan on med-high heat. Add onions and saute for 3 min. Add garlic and continue to saute for 2 more min. Add in the greens, stirring occasionally for 8 min or until the greens wilt. Add salt to taste, serve hot.
